Dry Ager: a company, a specialty & a story
Dry Ager is a German company specialized in dry aging food — mainly meat, but also fish, cheese, charcuterie, and more. What makes it particularly remarkable is its high-end positioning, technological precision, and long tradition in refrigeration.
1. Origins & background
The story begins with Manfred Landig, a refrigeration technician and passionate hunter. He founded a refrigeration technology company in southern Germany (Bad Saulgau, in Upper Swabia) in the early 1980s.
This family business was for many years specialized in refrigeration systems and vacuum-packaging equipment for the food industry, particularly meat.
In 2012, his sons Christian and Aaron Landig took over, with one ambition: to revolutionize dry aging.
After several years of development, they presented their first prototype of a “Dry Aging Fridge” in 2013, designed together with butchers and food laboratories to ensure extremely precise performance.
Commercial launch followed in 2014: the Dry Ager brand quickly gained visibility and generated strong interest.
Since then, the company has grown significantly: it exports its solutions to more than 60 countries while remaining faithful to its “Made in Germany” production.
In 2021, Dry Ager introduced its SmartAging® technology, an innovation that automates and simplifies the aging process, paving the way for “aging 2.0.”
2. Specialty & expertise
High-precision dry aging: Dry Ager products are not simple refrigerators. They are climate-controlled chambers dedicated to aging, with fine control of temperature (0 to +25 °C) and humidity, designed to recreate an optimal environment for maturation.
SmartAging® technology: This technology allows users to launch different aging programs (“meat,” “salmon,” “charcuterie,” “cheese”…), very easily, delivering consistent results even without expert knowledge.
Advanced hygiene: Dry Ager cabinets are often equipped with UVC sterilization to purify the air, as well as activated-carbon filters. This helps limit the development of unwanted microorganisms during aging.
German engineering / “Made in Germany”: Production is strongly quality-oriented, relying on regional partners in Germany.
Knowledge transfer: Dry Ager doesn’t just sell aging cabinets; it also provides extensive educational resources, such as its “Dry Aging Bible” (300+ pages), to help both professionals and enthusiasts master the art of dry aging.
